For the base:

  • Biscuits
    120 g
  • Butter Căsuța Mea 82,5%
    60 g

For the filling:

  • Butter Căsuța Mea 82,5%
    400 g
  • Sugar
    120 g
  • Sour Cream Căsuța Mea 20%
    200 g
  • Extra Light Cream (Half-and-Half) Căsuța Mea 10%
    150 ml
  • Chicken egg
    2 pc
  • Cornstarch
    2 tbsp
  • Vanilla Extract
    1,5 tbsp
  • Lemon Juice
    1/4 glass

Directions

  1. Mix the crushed biscuits with the melted butter. Transfer the mixture into a springform pan (16 cm in diameter), with the base wrapped in aluminum foil. Press down firmly to create a compact crust. Brush the sides of the pan with a little butter and secure a strip of parchment paper around the edges.
  2. In a bowl, mix the cream cheese with the sugar until creamy. Add the sour cream and stir. Pour in the sweet cream and blend well. Gently fold in the eggs, lightly beaten beforehand. Add the starch and vanilla extract, mixing until you achieve a smooth batter. Add the lemon juice and stir gently. Pour the mixture over the crust.
  3. Place the mixture in a larger baking dish for a bain-marie (add hot water to the outer tray). Bake for 30 minutes at 180°C, then reduce the temperature to 150°C and bake for another 30 minutes. Turn off the oven and leave the cheesecake inside for 1 hour without opening the door. Let it cool completely, then refrigerate overnight.
  4. Remove the cheesecake from the pan, peel off the baking paper, and serve it with jam, salted caramel, or your favorite topping. Enjoy! 🍰
