Directions

  1. Beat the eggs together with the sugar and orange zest until the mixture becomes light in color, fluffy, and airy. Add the melted butter and orange juice, and mix well until fully combined.
  2. Incorporate the flour mixed with the baking powder and salt. Stir until you obtain a smooth dough, free of lumps. Add the grated carrots and chopped walnuts, and gently mix until they are evenly distributed throughout the mixture.
  3. Pour the batter into a baking pan lined with parchment paper. Bake the loaf in a preheated oven at 170–180°C for 40–50 minutes, depending on the size and height of the pan.
  4. Check if it’s baked by using a toothpick – if it comes out clean, the cake is ready. Let it cool, then slice and enjoy a dessert that simply melts in your mouth.
