For the dough:

  • Flour
    375 g
  • Sugar
    105 g
  • Butter Căsuța Mea 82,5%
    110 g
  • Chicken egg
    2 pc
  • Honey
    60 g
  • Baking soda
    9 g
  • Lemon Juice
    1 tbsp

For the cream:

  • Sour Cream Căsuța Mea 30%
    600 g
  • Sugar
    90 g
  • Toffee caramel
    30 g

Directions

  1. Melt the sugar in a heavy-bottomed saucepan over medium heat. Remove from the heat, add the honey, then the cold butter, and stir well.
  2. Pour the mixture into a bowl, passing it through a sieve to remove any lumps of undissolved sugar. Let it cool for 5 minutes. Add 75 g of flour and the eggs, stirring continuously. Incorporate the baking soda and lemon juice, then mix again.
  3. Add the remaining flour and mix until you obtain a smooth dough. Wrap it in cling film and let it cool completely. Divide the dough into 5 equal pieces. Roll out each piece to approximately 30×30 cm. Prick the dough with a fork and bake for 4–5 minutes at 200°C. Remove from the oven and quickly cut into strips about 9 cm wide.
  4. For the cream, beat all the ingredients until you achieve a fluffy and stable texture. Spread the cream on each strip, reserving a little for decoration. Refrigerate overnight so the layers soften.
  5. Roll the first strip into a spiral, then continue with the others, forming the vertical cake. Secure the cake in a ring and refrigerate for another 2 hours. Decorate with the remaining cream and crumbs. Enjoy! 🍰
