A light and refreshing salad with asparagus, white beans and cottage cheese. Perfect for a healthy lunch or a light dinner.

    650 g
  • Mint
    1 tbsp
  • Pine nuts
    2 tbsp
  • Cottage Cheese Granulated Căsuța Mea 8%
    100 g
  • Olive Oil
    to taste
  • Salt
    to taste
  • Black Pepper
    to taste

Directions

  1. Place the shallot in a bowl and add a little grated lemon zest along with all the lemon juice. Set aside while you prepare the rest of the ingredients.
  2. Heat a wide pan over medium heat with a little olive oil. Add the asparagus, season with salt and pepper, and cook, stirring occasionally, until it becomes tender and lightly browned.
  3. In the bowl with the shallots, add the beans and the mint. Drizzle with a little olive oil and season with salt and pepper to taste.
  4. Place the bean mixture on a platter. Add the asparagus on top, sprinkle with grated cheese, and scatter the pine nuts. Enjoy! 🌿
