Soft fig cake made with fresh figs and a tender buttery batter. A simple and elegant dessert perfect for tea or coffee.

Directions

  1. In a large bowl beat the eggs with salt, sugar and vanilla sugar until slightly fluffy.
  2. Add melted butter and sour cream and mix until smooth.
  3. Gradually add the flour mixed with baking powder until you obtain a thick but pourable batter.
  4. Pour the batter into a buttered baking pan or one lined with parchment paper.
  5. Arrange the figs on top of the batter, pressing them slightly into the mixture.
  6. Bake in a preheated oven at 180°C for 40–45 minutes until golden and a toothpick inserted in the center comes out clean.
  7. Let the cake cool in the pan, then slice and serve.
