Directions
In a bowl, mix: lukewarm water with 1 tablespoon sugar and fresh yeast, let the yeast activate for 10 minutes.
In another large bowl, mix: the lukewarm milk, add the egg, salt powder, sugar and melted butter.
Add the activated yeast and sifted flour.
Mix then knead for 10-12 minutes.
Let it rise for 30 minutes.
Cut 1/3 of the dough and roll out into a round shape and place in a 26 cm diameter pan.
Cut another 1/3 of the dough and divide it into 3 equal pieces.
Roll each piece into thin strips 1 meter long.
Braid a tail from all the wands.
Place the border in the tray and join the edges.
Divide the remaining dough again into 3 equal pieces.
Stretch 70 cm strips.
Braid a tail again.
Divide the tail in half, then one half again into 2 equal parts.
For the filling: mix the cottage cheese, sugar, semolina, oil and raisins.
Add the filling to the pan, leveling the entire surface.
Make room for the filling and place the pieces of dough in the shape of a cross.
Brush the entire surface with beaten egg, cover with a towel and let rise for 1 hour.
Bake for 50 minutes at 170 °C.
Let the cake cool for 7-8 hours.
Cut and serve.
