Fluffy pancakes filled with melted mozzarella. Perfect for breakfast, brunch or a quick meal, served with either sweet or savory toppings.

  • Chicken egg
    2 pc
  • Kefir Căsuța mea 3,2%
    150 ml
  • Flour
    120 g
  • Baking powder
    1/2 tsp
  • Salt
    1 pinch
  • Mozzarella Căsuța Mea for Pizza and Sandwiches
    125 g
  • Oil
    to taste

Directions

  1. Grate the mozzarella on the coarse grater.
  2. In a bowl, whisk the eggs together with the salt using a whisk, then add the kefir or yogurt and mix.
  3. Mix the flour with the baking powder, then incorporate it into the egg mixture until you obtain a smooth and creamy batter.
  4. Heat a pan over medium heat and grease it with a little butter or oil. Pour a small ladle of batter and let it cook for about 1 minute, until bubbles appear on the surface.
  5. Sprinkle grated mozzarella in the center, cover with a little dough, and flip the pancake. Cook for about 1 more minute, until nicely browned on both sides.
  6. Serve the pancakes warm, with sweet or savory toppings. Enjoy!
