Directions

  1. Cut the eggplant into cubes and soak in salted water for 15 minutes.
  2. Heat the pan with oil and butter, add the chopped onion and sauté until it browns.
  3. Add the drained eggplant.
  4. Fry for 5-7 minutes.
  5. Add the chopped garlic, sauté for another three minutes.
  6. The eggplant should be golden-brown and soft and tender.
  7. Season with salt, pepper, and dill to taste.
  8. Sauté for another five minutes.
  9. Eggplants can be served with suluguni cheese or walnuts. Enjoy!
