Directions

  1. Separate the egg whites from the yolks.
  2. In the bowl with the egg yolks, add the salt, baking powder, milk, oil, and flour. Mix well until you obtain a smooth, lump-free batter.
  3. Beat the egg whites together with the sugar until you achieve a firm foam (about 8–10 minutes).
  4. Fold the egg whites into the batter in several batches, mixing gently.
  5. Heat a pan over medium-low heat and lightly grease it with oil.
  6. Place the dough with a spoon and fry the blini under a lid, until they are nicely browned on both sides.
  7. Serve them with fresh fruit or as you prefer: honey, yogurt, sour cream, or jam. For a special touch, you can decorate them with crushed pistachios, freeze-dried fruits, or even cotton candy. Enjoy!
