In a bowl, add 100 g of cold butter cut into cubes, 50 g of extra fine cornmeal, 150 g of sifted flour, 1 g of baking powder and 100 g of light brown sugar, grate the zest of an orange.
Mix until the composition is homogeneous; it should resemble wet sand.
Squeeze the juice from one and a half oranges, then stir again for 2-3 minutes with a spatula. (Place in the fridge for 10 minutes)
Form 24 balls, each weighing 20 grams.
Place them on trays lined with baking paper, greased with oil on the entire surface, leaving 5 cm space between them.
With your finger, make a 1 cm indentation in the center of each sphere, sprinkle with a little sugar and grate the zest over them.
Bake for 12 minutes in a preheated oven at 180 °C.
