Directions

  1. In a bowl, add 100 g of cold butter cut into cubes, 50 g of extra fine cornmeal, 150 g of sifted flour, 1 g of baking powder and 100 g of light brown sugar, grate the zest of an orange.
  2. Mix until the composition is homogeneous; it should resemble wet sand.
  3. Squeeze the juice from one and a half oranges, then stir again for 2-3 minutes with a spatula. (Place in the fridge for 10 minutes)
  4. Form 24 balls, each weighing 20 grams.
  5. Place them on trays lined with baking paper, greased with oil on the entire surface, leaving 5 cm space between them.
  6. With your finger, make a 1 cm indentation in the center of each sphere, sprinkle with a little sugar and grate the zest over them.
  7. Bake for 12 minutes in a preheated oven at 180 °C.
  8. Transfer the biscuits to a wire rack to cool.
