Directions
Sauté the chopped onion in oil until it browns.
Add the diced carrots with grated garlic and sauté for another 5 minutes.
Add the minced meat with tomato paste and sauté for another 6 minutes.
Add grated tomatoes, season to taste with salt and your favorite spices.
Simmer covered for 40 minutes.
Bake the eggplants wrapped in aluminum foil for 40 minutes at 200°C.
Remove the aluminum foil, cut in half lengthwise but not all the way through.
Form a little pocket.
Fill with the prepared sauce.
Transfer to a tray, turn back in the oven and bake for 20 minutes at 180°C.
Take out the tray, sprinkle with grated cheese, return to the oven and bake for another 2-3 minutes or until the cheese melts.
Serve with fresh basil.
