Eggplant with Bolognese sauce

  • Eggplant
    300 g

Directions

  1. Sauté the chopped onion in oil until it browns.
  2. Add the diced carrots with grated garlic and sauté for another 5 minutes.
  3. Add the minced meat with tomato paste and sauté for another 6 minutes.
  4. Add grated tomatoes, season to taste with salt and your favorite spices.
  5. Simmer covered for 40 minutes.
  6. Bake the eggplants wrapped in aluminum foil for 40 minutes at 200°C.
  7. Remove the aluminum foil, cut in half lengthwise but not all the way through.
  8. Form a little pocket.
  9. Fill with the prepared sauce.
  10. Transfer to a tray, turn back in the oven and bake for 20 minutes at 180°C.
  11. Take out the tray, sprinkle with grated cheese, return to the oven and bake for another 2-3 minutes or until the cheese melts.
  12. Serve with fresh basil.
  13. Enjoy!
