In another bowl, mix the butter at room temperature with the sugar with a whisk, add the egg, lemon juice and lemon zest, continue mixing for 3-4 minutes.
Incorporate the solid ingredients and refrigerate the dough for 1 hour.
Take out the dough, form 25 gr balls, roll them in sugar and then powdered sugar.
Transfer the balls to a tray lined with baking paper.
Place the tray in the preheated oven at 180 °C for 15-18 minutes.
The biscuits are soft, fragrant, and delicious, remaining soft even after 5 days when stored in a box.
