Directions

  1. Slice the eggplant lengthwise, season with salt to taste and brush each side with melted butter.
  2. Fry on both sides over medium-high heat until nicely browned.
  3. For the filling, mix the cream cheese with chopped walnuts, grated garlic, chopped parsley, sour cream, salt and pepper to taste.
  4. Add a teaspoon of filling on each slice and roll it up.
  5. Serve eggplant rolls on a platter with marinated onions and parsley.
  6. Enjoy!
