Directions
For the crust. Mix the biscuits with the melted butter.
Transfer to a 23 cm diameter tart pan, flatten and shape the base, then place in the freezer for 30 minutes.
For the mousse. Mix the gelatin with water and let it swell for 10 minutes, then melt in the microwave.
In a bowl, add the egg yolk with the honey, mix.
Pour the milk and liquor, mix again.
Place the bowl in the steam bath and cook until it thickens slightly.
Add white chocolate, mix, pour the melted gelatin и mix again.
Whip the cream, pour over the mixture, and mix.
Pour the mixture over the base and put it in the freezer for 1 hour.
For the Lemon Jelly. Mix the gelatin with 125 ml of water and let it swell for 10 minutes.
In a saucepan, pour the remaining water, add the sugar and honey, stir until the sugar melts.
Add the bloomed gelatin, stir until it melts, pour in the lemon juice, stir again, and let it cool down a bit.
Take the mold out of the freezer, add the preferred berries, cover with the gelatinous water and refrigerate for 3-4 hours.
Take out and savor. Enjoy!
