Cut the chicken along the backbone and open it up with the breast facing upwards.
Season with salt and black pepper.
Heat a pan well, pour in the oil, add the butter, and fry until it turns a beautiful golden brown.
Cover the chicken with aluminum foil and bake it for one hour at 180°C.
For the sauce, mix all the ingredients, coat the chicken with the prepared sauce, and return it to the oven for another 30 minutes or until it turns a beautiful golden brown.
