Fry grated onion and carrot in a frying pan with oil.
Add the minced meat, stir and leave until the meat changes color.
Season with salt, black pepper, paprika, oregano to taste and water.
Leave to boil for 20-25 minutes.
Cut the potatoes into thin slices (you can use boiled, baked or mashed potatoes - this will cut the cooking time in half).
Beat sour cream with eggs, grated cheese and 1 teaspoon of oregano.
Assemble the musaca.
Place a layer of potatoes, half of the previously cooked meat, a layer of potatoes, the remaining meat and more potatoes.
Finally, add the sour cream mixture.
Cover with a foil and put it in the oven preheated to 200°C for 90 minutes, then remove the foil and leave it for another 7-8 minutes until it lightly browns on top.
