Directions

  1. Season the chicken fillet, cut into equal pieces, with salt and refrigerate for at least 30 minutes.
  2. In a bowl, combine the flour with all the spices: sweet and smoked paprika, thyme, oregano, garlic powder, salt, and pepper.
  3. Prepare two bowls: one with kefir and one with the seasoned flour mixture.
  4. Dip each piece of chicken first into the kefir, then into the dry mixture, coating well.
  5. Place the breaded chicken on a rack and let it rest for 5–10 minutes — this helps create an extra crispy crust.
  6. Heat the vegetable oil in a deep pot to 165–175°C.
  7. Fry the chicken in batches, avoiding overcrowding.
  8. Once golden and crispy, remove and place on a rack, not on paper towels, to keep the crust crisp.
  9. Serve hot with ketchup, garlic yogurt sauce, or a fresh salad. Perfect as an appetizer, snack, or main dish.
