Add the eggs and very cold milk (place them in the freezer for about 20-30 minutes) to the bowl of a mixer, then add the sugar, flour, and salt.
Finish with dry yeast, knead the dough using a dough hook, first speed, for 8-10 minutes.
Incorporate the cold butter, cut into small cubes, in 4-5 stages, waiting each time for the dough to absorb it.
Then switch to the second speed and knead for another 10-15 minutes until you get a smooth and beautiful dough. Cover the dough with plastic wrap and refrigerate for an hour.
Divide the dough into portions of 60-70 grams each, and let them rest for 15 minutes.
Then, shape them into balls again, place them on parchment paper at a reasonable distance, and let them rise for 1.5 to 2 hours.
Brush with a mixture of eggs and milk (1:1), generously sprinkle with sesame seeds, and bake for 15-20 or even 25 minutes at 180°C.
