Cheesecake with blackcurrant jam

A smooth and creamy cheesecake topped with aromatic blackcurrant jam.

  • Yogurt
    180 g
  • Sugar

  • Chicken egg

  • Black currant
    100 g
  • Sugar
    1 tbsp
  • Water
    2 tbsp

Directions

  1. In a blender, mix the biscuits with slightly melted butter until you get the texture shown in the video.
  2. Use half of the mixture to form the base and sides of the cheesecake, and spread the remaining half evenly with a spoon.
  3. Bake the biscuit base for 10 minutes at 180 °C. Meanwhile, blend the cottage cheese and yogurt until smooth and creamy.
  4. Add the sugar and mix well using a hand mixer. Add the eggs one at a time, mixing well after each addition.
  5. Add the flour and mix again until fully combined. Pour the filling over the baked base and bake for about 1 hour at 160 °C.
  6. For the jam, combine the blackcurrants with sugar and water and cook over medium heat until slightly thickened.
  7. Let the cheesecake cool completely, then slice and plate it.
  8. Spoon the blackcurrant jam over the top and enjoy its soft and fluffy texture.
