Directions

  1. Prepare a loaf pan, grease it with butter, and dust with flour. In a bowl, beat the eggs with sugar until fluffy and pale.
  2. Fold in the melted butter, then add yogurt (or ricotta) and mix well. Sift the flour with baking powder and gradually add to the mixture, gently folding with a spatula.
  3. Toss the plums with cornstarch (or flour) and gently fold into the batter. Pour the batter into the prepared pan, level it, and bake for about 40 minutes at 180°C or until a toothpick inserted comes out clean.
  4. Let the cake cool 10 minutes in the pan, then transfer to a wire rack and cool completely. Fluffy, tender, and full of flavor. Enjoy!
