Heat the kefir in the microwave until it becomes warm.
Add the egg with the sugar, salt, and mix.
Add the flour and baking soda, mix again until combined.
Continue with the grated zucchini drained of liquid.
Then the grated mozzarella, mix it in, the dough should be thick.
Heat a pan over high temperature, reduce the heat to almost low, shape the pancakes, cover with a lid until they are nicely browned, about 3-4 minutes on each side.
Pancakes are especially good with sour cream!
