For the glaze:

Directions
Pass the cottage cheese through a sieve 2–3 times until it becomes smooth and creamy.
Heat the sweet cream in a small saucepan, without bringing it to a boil.
Place the white chocolate and vanilla extract in a bowl. Pour the hot cream over them, let it sit for 1–2 minutes, then stir until the chocolate is completely melted.
Add the pistachio paste and soft butter, then mix until you obtain a smooth cream.
Incorporate the cream into the cottage cheese and mix well.
Fill the molds to about two-thirds of their height. Using a spatula, push the mixture towards the edges to create a hollow in the center.
Pour the caramel into the center of each mold. Cover with the remaining mixture and smooth the surface.
Place the molds in the freezer until the desserts are completely set.
Pistachio Glaze
Melt the white chocolate in the microwave or in a bain-marie.
Add the pistachio paste and vegetable oil. Mix until you obtain a smooth and glossy glaze.
Take the little cheeses out of their molds, one by one. Gently prick them with a toothpick, being careful not to reach the filling, then dip them into the glaze. Let the excess drip off and decorate as you like, for example with chocolate figurines.
