  • Brine
    500 ml
  • Barbecue sauce
    100-150 g
  • Paprika
    1,5 tsp
  • Oregano
    1,5 tsp
  • Garlic granulated
    1 tsp
  • Onion powder
    1 tsp
  • Salt
    2 tsp
  • Black Pepper
    1/2 tsp

For the brine:

  • Water
    1 l
  • Salt
    1 tsp
  • Sugar
    1/2 tbsp
  • Vinegar
    1 tbsp
  • Bay Leaf
    1 pc
  • Garlic
    2 clove
  • Black peppercorns
    to taste

Directions

  1. For the brine, boil 1 liter of water together with all the ingredients. Let it simmer on low heat for 10 minutes, then let it cool completely. Cut the chicken wings into pieces (the tips can be removed).
  2. In a large bowl, add the wings, kefir, and cooled brine. Season with paprika, oregano or thyme, granulated garlic, dried onion, salt, and pepper. Mix well, cover, and let marinate in the refrigerator overnight.
  3. Preheat the oven to 120°C. Arrange the wings on a baking tray and roast them for about 3 hours, until they become very tender.
  4. Coat the wings with barbecue sauce and bake them for another 15–20 minutes at 170°C, until they develop a golden, appetizing crust.
  5. These BBQ chicken wings are tender, juicy, and full of flavor, with a perfect balance between the brine's aromas and the sweet-tart sauce. Enjoy!
