Directions

  1. Cut the eggplant into slices, approximately 1 cm thick. Season with salt to taste, mix everything well and leave for 30 minutes to let it absorb the flavor.
  2. Then wash the eggplant well.
  3. Place the slices in a tray, add grated garlic, diced tomatoes, sprinkle with grated cheese and black pepper.
  4. Bake 30 minutes.
  5. Remove, sprinkle with herbs and serve. Enjoy.
