Flan Breton is a classic French dessert with a silky vanilla custard and brandy-soaked prunes. Elegant, rich and full of flavor.

  • Sugar

Directions

  1. Put the dried plums in a bowl, pour the brandy over them, and let them marinate overnight in the refrigerator.
  2. The following day, place the milk, butter, vanilla pod, and its seeds into a saucepan. Warm over low heat until the butter melts, making sure not to bring the milk to a boil.
  3. In a bowl, whisk the eggs, yolks, sugar, and salt until the mixture becomes smooth.
  4. Add the flour and mix well.
  5. Gradually pour the warm milk into the egg mixture, stirring continuously with a whisk.
  6. Cover the bowl with plastic wrap and leave the dough in the refrigerator overnight.
  7. Pour the batter into a buttered and floured pan.
  8. Spread the marinated plums evenly in the dough.
  9. Bake in a preheated oven at 200°C, using the top and bottom heat function with convection, for 45 minutes, until the surface turns a golden color.
  10. Let the cake cool to room temperature for at least 2 hours before serving. Enjoy!
