Directions

  1. Mix room temperature water with fresh yeast.
  2. Add the flour and salt, knead for 10 minutes, cover and let it rest for 3 hours at room temperature.
  3. It is rolled into a rectangle, folded in 3, and rounded. (grease hands and surface with oil).
  4. Return to the bowl, cover with cling film, and leave in the fridge for 10-12 hours.
  5. Take out 2 hours before kneading the dough.
  6. Mix the egg whites, sugar, and almond flour until smooth.
  7. Mix the fruits with the rum and refrigerate for at least 10-12 hours.
  8. Mix the yeast with the milk and let it sit for 8 minutes.
  9. In a bowl, combine the flour, salt, sugar, and vanilla.
  10. Pour the milk with the yeast and egg yolks.
  11. Mix for 3 minutes.
  12. Add the sourdough starter and mix for 15 minutes, add the butter and continue kneading for another 15 minutes.
  13. Add the rum-soaked fruits, and if desired, grate the zest of one orange; knead for 3-4 minutes.
  14. Cover the dough and let it rise for 3 hours.
  15. We divide the dough into 4 equal pieces, shape them into balls, and cover with plastic wrap for 3 hours to rise.
  16. After 3 hours, cover the surface of the panettones with the crust dough, sprinkle with almond flakes, and bake for 40-45 minutes at 160°C.
