Sweet potato fries with sour cream sauce

In a container, mix the sour cream, grated garlic, and season with salt and black pepper.
If desired, add greens and crushed chili pepper.
For the potatoes: heat the oil to 180 °C.
Peel the potatoes and cut into 6-7 cm x 1 cm strips.
Wash the potatoes in cold water and dry them with a paper towel.
Transfer to a bowl, sprinkle with potato starch and mix.
Dip half of the potatoes in the oil and fry for 8-10 minutes, stirring regularly.
Remove the potatoes to a paper towel, transfer to a plate, and sprinkle with salt.
Continue in the same way with the rest of the potatoes.
Serve immediately with the sour cream sauce prepared earlier.
