Directions

  1. Mix the eggs, sugar, and salt, then heat over a double boiler until the temperature reaches 50°C (the temperature is easy to check by touch, as the sugar practically dissolves).
  2. Beat the egg mixture with the sugar until it becomes fluffy, about 10 minutes.
  3. Pour the milk at room temperature in a thin stream, reducing the speed to a minimum, add the flour previously mixed with the baking powder.
  4. Gradually pour the melted butter and mix until homogeneous with a spatula, using upward movements.
  5. Cover the bowl with plastic wrap and refrigerate overnight.
  6. Preheat the oven to 200°C.
  7. Grease the pan with a thin layer of butter, sprinkle with flour.
  8. Fill the shell molds to 3/4 of their volume, place them in the oven, and reduce the temperature to 160°C.
  9. Bake for approximately 15-20 minutes. Enjoy the cookies! Bon appétit.
