Mix: flour, sugar, and salt,
add very cold butter cut into small cubes and incorporate with your fingers until it resembles wet sand.
Pour the very cold water and mix again until the dough forms.
Shape into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.
Roll out the dough ball between two parchment papers, in a round shape with a diameter of 30 cm.
Place thinly sliced apple slices,
leaving about 5 cm at the edges.
Sprinkle the apples with sugar and cinnamon, adding small cubes of butter here and there.
Fold the edges over the apples, brush with beaten egg and milk, and bake for 30-40 minutes at 190°C, or until the apples are soft and the crust is golden.
