  • Orange Juice
    200 ml
  • Orange zest
  • Butter Căsuța Mea 72,5%
    160 g
  • Gelatin
    4 g
  • Salt
    3 g

Directions

  1. Melt the sugar in a saucepan over medium heat.
  2. Pour the pre-boiled orange juice, add the orange peel along with the bloomed gelatin.
  3. Continue blending everything with the hand blender, cool down to 50 °C, then add the soft butter along with the salt.
  4. Cover the caramel with plastic wrap so that it touches the cream and place it in the fridge overnight.
  5. Beat with a mixer until we obtain a fluffy texture and enjoy.
  6. Enjoy!
