Directions
Melt the sugar in a saucepan over medium heat.
Pour the pre-boiled orange juice, add the orange peel along with the bloomed gelatin.
Continue blending everything with the hand blender, cool down to 50 °C, then add the soft butter along with the salt.
Cover the caramel with plastic wrap so that it touches the cream and place it in the fridge overnight.
Beat with a mixer until we obtain a fluffy texture and enjoy.
