Cottage Cheese and Apple Cake

Whisk the eggs for 4-5 minutes.
Add the sugar and continue mixing for 5 minutes.
Add previously mashed cottage cheese together with room temperature butter and vanilla extract, mix for 2-3 minutes.
Incorporate the flour with the baking powder and salt in several batches, mixing with a spatula.
Peel and dice the apples, add them to the dough, and mix until the ingredients bind together.
Transfer to a 25 cm diameter pan, previously greased with oil or butter.
Bake the cake for 40-50 minutes at 170°C.
Refrigerate and serve the cake for breakfast or dessert.
