Directions

  1. In a large pan, heat the oil over medium heat.
  2. Add the onion and garlic and sauté for 1–2 minutes, until the onion becomes translucent.
  3. Add the minced chicken and cook for 3–4 minutes, stirring, until it changes color.
  4. Season with salt, pepper, smoked paprika, garlic powder, chili powder, and chili flakes. Mix well.
  5. Add the tomato paste and cook for another 2–3 minutes.
  6. Pour in the water, reduce the heat to medium, and let it simmer for 8–10 minutes, until the meat is fully cooked and the liquid has nearly evaporated.
  7. Add the roasted bell pepper and cook for another 2–3 minutes. Turn off the heat and set the filling aside.
  8. Preheat the oven to 200°C.
  9. Place a little mozzarella in the center of each tortilla half, add 2–3 tablespoons of the chicken filling, then fold the tortilla into a triangle shape.
  10. Grease a round baking dish with butter. Place the tortilla pockets in the dish, brush the tops with melted butter, and sprinkle with mozzarella and cheddar.
  11. Bake for 15–20 minutes, until the cheese is melted, golden, and lightly browned.
