In a bowl, mix the wheat flour, hazelnut flour, salt, sugar, egg yolks, and very cold, cubed butter.
Incorporate the ingredients using our fingers until the mixture resembles wet sand, then shape it into a ball.
Wrap the ball in plastic wrap and refrigerate for 60 minutes.
Turn the dough out onto a lightly floured work surface and roll it out to a thickness of 4 cm.
Using a mold or a glass, form 6 cm circles.
Transfer the circles to a tray lined with baking paper.
Bake the biscuits in a preheated oven at 180 °C for 15-20 minutes, or until lightly browned.
Melt the chocolate in the microwave, pour the chocolate into a piping bag or a plastic bag, cut off the tip, and draw the eyes and little horns, then stick a candy on as the nose.
