Combine the flour with the brown sugar, incorporate the very cold butter.
Grind the mixture until you get a crumb resembling moist sand.
Add the egg yolk and the walnut paste, mix the dough until it becomes homogeneous.
Roll out the dough between two parchment papers to a thickness of 4 mm.
Cut out egg-shaped cookies and freeze for 30 minutes.
Transfer the cookies between two perforated baking sheets and bake immediately for 12-15 minutes at 170°C.
Completely chill the biscuits.
Add the caramel along the edge of the biscuit, about 3-4 mm from the border, place a few pieces of orange, then cover with the other half on top.
Put the cookies in the freezer for 10-30 minutes.
Dip each sandwich in chocolate, decorate with decorative candies, and enjoy.
