For the dough:

  • Cottage Cheese Căsuța Mea 9%
    150 g
  • Butter Căsuța Mea 82,5%
    80 g
  • Sugar
    20 g
  • Gelatin
    1 pc
  • Flour
    160 g
  • Baking powder
    1 tsp
  • Salt
    1 pinch
  • Vanilla seeds
    1 leaf
  • Orange zest
    1 pc
  • Egg yolk
    1 pc

For the filling:

  • Cranberry
    100 g
  • Sugar
    70-100 g
  • Walnuts
    30 g
  • Cornstarch
    1 tsp

Directions

  1. Mix the cottage cheese with the egg yolk and sugar.
  2. In another bowl, mix the flour with baking powder, grated orange zest, vanilla seeds, and a pinch of salt.
  3. Incorporate the very cold butter with our fingers until we achieve a texture similar to wet sand.
  4. Add the mixture over the cheese, stir, and form a dough ball. We wrap it in cling film and refrigerate for 30 minutes.
  5. For the filling, in a saucepan, add the cranberries and sugar, place on the stove and boil for 10-15 minutes, stirring regularly. Add the cornstarch and boil for another minute, stirring vigorously.
  6. Roll out the dough into a rectangular shape, about 4 mm thick. Spread the filling over the entire surface, sprinkle with chopped nuts, and roll lengthwise. Wrap the roll in plastic wrap and place it in the freezer for 30 minutes.
  7. Cut slices about 1.5 cm thick, transfer them onto a baking tray, and bake for 15–20 minutes at 180°C.
  8. The cookies turn out very delicious, the guests will be delighted. Happy Holidays!
