Italian rice with medium grain size. Differs from other varieties in that it increases greatly in volume during cooking, forming a creamy mass that does not become sticky. Contains easily digestible starch, amino acids, vitamin B1, magnesium, selenium, phosphorus, iron, zinc, etc. Does not contain gluten. Due to its creamy consistency, arborio rice is ideal for making risotto, rice pudding, arancini (rice balls with meat filling).
