This is a variety of pulled cheese, aged in brine, with an elastic fibrous structure and salty taste. The homeland of this cheese specialty is most likely Georgia (Sakartvelo), however, it was popularized worldwide by Armenians, more specifically the extensive Armenian diaspora. Traditionally, this Caucasian product is sold in the form of "braids", plaits, or bundles of thinner or thicker cheese "threads", their color varying from white to yellow, depending on how much they are smoked or not smoked at all. This ingredient is also very beneficial for health as it contains vitamins from group B, A, D, E, PP, as well as sodium, copper, calcium, magnesium, potassium, iron, zinc, selenium. Thus, chechil is a wonderful snack, especially for beer and homemade wine. It is also added to salads, soups, pies, and is used in preparing very popular and traditional local cheese balls or for binding pancakes so that their filling doesn't leak out. This cheese variety can be fried in a pan or baked in the oven, pairing wonderfully with vegetables and herbs.
