Eggplant stuffed with tomato sauce and mozzarella

    100 g
  • Olive
    50 g
  • Garlic
    3 clove
  • Olive oil
    10 ml
  • Salt
    to taste
  • Ground Black Pepper
    to taste
  • Oregano
    to taste

Directions

  1. Cut the eggplant in length & crest in the middle.
  2. Sprinkle with salt & black pepper to taste, sprinkle with oil & bake for 15-20 minutes, temperature 200 C.
  3. We fry the tomatoes in a frying pan with a tablespoon of oil.
  4. Add the chopped garlic, season with a pinch of salt & oregano to taste, fry about 10 minutes.
  5. Remove the eggplant from the oven & crush the core with a fork.
  6. We add the tomato sauce, the scraped mozarella & a few olives.
  7. We return to the oven for 10-15 minutes, or until Mozarella melts.
  8. It is served warm with fresh basil. Enjoy your meal!
