Cut the zucchini into thin slices, about 0.7-1 cm thick. Fry them in hot oil over medium heat on both sides until nicely browned and slightly crispy.
Once the zucchini is roasted, transfer it to a baking sheet.
In a bowl, mix together the sour cream, tomato paste, and minced garlic.
Season with salt, black pepper and sweet peppers, then add the crown mozzarella. Mix the sauce well.
Pour the sauce over the zucchini, making sure to cover them evenly. Bake at 200°C for 10-15 minutes, until the mozzarella melts and turns golden brown.
These zucchini baked in a creamy, garlicky sauce are delicious and can be enjoyed both warm and cold.
